For Today:  Sunday, May 10, 2015

Outside my window …  So far one of, if not the warmest day of the year.  The honeysuckle and roses are loading the air with the most wondrous perfume. 

I am thinking...   about the mother's day video shown at church today.  Part of the video mentioned women who weren't mothers.  My first thought was "Oh lawd.  Here we go."  But it was actually good.  They encouraged those of us ladies who don't have biological children to remember that we are God given examples and mentors to younger girls.  Great reminder.

I don't feel like a mentor and never set myself up to be one.  The concept makes me quite uncomfortable really. 

I am thankful...  For God's amazing grace.

C is for Cauliflower

Mashed cauliflower and baked chicken
I've read articles and have viewed videos talking about what a wonderful substitute mashed cauliflower is for mashed potatoes.  I was skeptical, but thought I'd try it.  I boiled the cauliflower for about 20 minutes, drained it, mashed it, and seasoned it as I would mashed potatoes.  OK I'll admit they taste pretty good, but they do NOT substitute for mashed potatoes.  They are very watery even after draining and mashing.  Sorry, but this is one of those dishes that's so unsatisfying that it makes you mad.  I'll make this again, but it needs to be paired with more than baked chicken to keep me from hunting something else to eat afterwards.
                                                                                                                    
 From the Workshop...

The last birdhouse for the quilt-ghan is done.  I'm now in the process of setting the houses, filling in the squares, and making the appliques.

I am reading...  Still working on The Blessing of the Lord by Kenneth Copeland.  It took me a while, but now that I'm into the book, I'm enthralled.  It's great so far. 

I am looking forward to...  I'm heading out to Oklahoma this coming weekend for a conference.  That's all I can mention right now.  When it's over, I'll know what I can share from it.  Though I'm excited, the mystery of it kind of freaks me out.  I'm going with my friend Carla who's been to this conference and a few of her friends, so at least I'll be safe.

I am learning…   I'll get back to you.
Around the house...  Other than trying not to burn down the kitchen with my experiments, nothing special.

One of my favorite things...  This one is getting harder to answer every week.

A few plans for the rest of the week:   My trip to Oklahoma. 

A peek into my days... 





















Substituted at the preschool Tuesday and decided to draw a picture of my dream home.  The kids thought it was great.

It was a little hot, but Leah and I went riding today and had a good time.  We tried to stick to shady areas and took frequent breaks.  I need to get a water bottle holder for my bike.  That would help the situation greatly.

And now for something totally different...  

I've mentioned before about the "voodoo science" that's presented to the health conscious.  You'd think I wouldn't be surprised by it, however, I saw a video about the "Top 10 Healthiest Foods."  They were OK until they got to Kale.  The announcer gleefully announces, "A cup of kale actually matches, and sometimes surpasses a cup of milk in terms of calcium content."  First, how does something match and sometimes surpass something without some sort of effort involved?  Kale doesn't do anything; it just sits there.  Second, the statement is just a flat out lie.  I looked it up:  1 cup of kale = 100 mg of calcium; 1 cup milk = 300 mg of calcium.  Now, on what planet does 100 mg "match and sometimes surpasses" 300 mg?  I've never eaten kale, but the hype is leaving a bad taste in my mouth.  Keep this up and my K food may be Kit-Kat Bars.  Gimmie a break!  (See what I did there?)

  3. I cannot imagine that mashed cauliflower would take the place of mashed potatoes. I recently read how to make cauliflower like rice! Sounds intriguing to me! Hope you have a super week

    1. Yep, it's wishful thinking. I don't eat mashed potatoes very often, so I'll stick with them when I'm the mood.

  4. Ooh, I don't think I'll be trying out the mashed cauliflower, lol. I love veggies, but can't handle them mashed! I'm looking forward to seeing the finished appliques on your blanket, the birdhouse is such a pretty motive.
